Lemon Edamame Avocado Sandwiches

Ingredients:

  • 1 cup shelled edamame beans

  • 8 slices whole grain bread

Top each slice with edamame beans, spinach leaves, cucumber slices, and tomato slices

This chicken patty burger is tasty and juicy, and it's great for a quick and filling meal. The chicken patties that are made from scratch are perfectly seasoned and then topped with Swiss cheese, fresh vegetables, and sauces.

Ingredients:

  • 1 lb ground chicken

  • 1/4 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup finely chopped onion

  • 1/4 cup finely chopped red bell pepper

  • 1/4 cup finely chopped fresh parsley

  • 1 clove garlic, minced

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 4 hamburger buns

  • Lettuce leaves

  • Tomato slices

  • Red onion slices

  • 4 slices of Swiss cheese

  • Mayonnaise

  • Ketchup

  • Mustard

Instructions:

Ground chicken, breadcrumbs, Parmesan cheese, onion, red bell pepper, parsley, garlic, salt, and black pepper should all be mixed together in a bowl


Mix everything together well


Shape the mixture into 4 patties that are all the same size


Set a skillet or grill over medium-high heat to get them hot


The patties should be cooked on a grill or stove for five to six minutes on each side, or until they are fully cooked


Add a slice of Swiss cheese to each patty and let it melt in the last minute of cooking


On the grill or in a toaster, split the hamburger buns and toast them just a bit


On the bottom bun, spread mayonnaise


Then, put a chicken patty with melted cheese on top of it


On top of the patty, put slices of tomato, red onion, and lettuce


Put ketchup and mustard on the top bun, and then put it on top of the burger

Caramelized Pineapple Quesadillas with Spicy Strawberry Salsa

Ingredients:

  • 1 cup diced fresh pineapple

  • 2 tablespoons brown sugar

  • 4 flour tortillas

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup diced red bell pepper

  • 1/4 cup chopped fresh cilantro

  • 1 jalapeo pepper, minced remove seeds for less heat

  • 1 cup diced strawberries

  • 1/4 cup red onion, finely chopped

  • 2 tablespoons fresh lime juice

  • 1 teaspoon honey

  • Salt and pepper to taste

  • 2 tablespoons vegetable oil

Instructions:

Cut up the strawberries, red onion, jalapeo pepper, lime juice, honey, and a pinch of salt


Put them all in a small bowl


To make the spicy strawberry salsa, mix it well


Put away


Warm the vegetable oil in a medium-sized pan over medium-high heat


Put the brown sugar and diced pineapple in the pan


It will take about 5 to 7 minutes of stirring every now and then until the pineapple turns golden brown and caramelizes


Take it off the heat and set it aside


Put a tortilla in a clean pan that's on medium heat


Spread a quarter of the Monterey Jack cheese shreds on one half of the tortilla


On top of the cheese, put a quarter of the pineapple that has been caramelized, diced red bell pepper, and chopped cilantro


To make a half-moon shape, fold the other half of the tortilla over


It should be cooked for two to three minutes on each side, or until the cheese melts and the tortilla gets crispy


Do this step again with the rest of the tortillas and filling


Add a lot of spicy strawberry salsa to the top of each quesadilla wedge when you serve it


Go with a spicy strawberry salsa to go with your pineapple quesadillas that have been caramelized


They're a great snack or starter because they're both sweet and savory

Coffee Chocolate Chunk Cookies

Instructions:

Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line two baking sheets with parchment paper


Beat the softened butter, brown sugar, and granulated sugar in a sizable mixing bowl until the mixture is light and fluffy


One egg at a time, adding and beating thoroughly after each addition


Add the instant coffee granules to the mixture and blend until well combined after dissolving them in the vanilla extract


Mix the flour, baking soda, cocoa powder, and salt in a different bowl


Mixing until just combined, gradually add the dry ingredients to the wet ones


Mix in the chocolate chips or chunks, dividing them equally throughout the dough


Round tablespoons of dough should be dropped, separated by roughly 2 inches, onto the baking sheets that have been prepared


Bake for 10 to 12 minutes, or until the centers are still soft but the edges are set, in a preheated oven


After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to a wire rack to finish cooling

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup unsweetened almond milk

  • 1/4 cup vegetable oil

  • 1 tsp vanilla extract

  • 2 tbsp rainbow sprinkles

Instructions:

Warm the oven up to 350F 175C and put paper liners in a muffin tin


Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl


Mix the dry ingredients together with the almond milk, vegetable oil, and vanilla extract


Don't mix any further than that


Add the rainbow sprinkles slowly


Fill up about two thirds of the way to the top of each muffin cup with batter


Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean


Take out of the oven and let cool for 5 minutes in the pan


Then, move to a wire rack and let cool all the way through

Dan Dan Noodles with Seitan Stirfry

This vegan take on the traditional Sichuan dish features Dan Dan noodles and seitan in a flavorful and spicy stir-fry. This dish is quick and simple to make, and it's full of flavor.

Ingredients:

  • 8 oz Dan Dan noodles

  • 1 cup seitan, sliced thinly

  • 2 tablespoons vegetable oil

  • 3 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 2 green onions, chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 2 teaspoons chili paste

  • 1/2 cup vegetable broth

  • 1 tablespoon cornstarch

  • 1 teaspoon sugar

  • 1/4 cup crushed peanuts

  • Fresh cilantro leaves for garnish

Instructions:

Follow the directions on the package to prepare the Dan Dan noodles


After draining, set aside


Combine the soy sauce, sugar, cornstarch, chili paste, sesame oil, and vegetable broth in a small bowl


Put aside


In a large skillet or wok, heat the vegetable oil over medium-high heat


Stir-fry the ginger and garlic for one to two minutes, or until fragrant


Brown the seitan slices by cooking them for three to four minutes


Stir-fry the seitan for a further two to three minutes, or until the sauce thickens, after pouring the sauce mixture over it


When the Dan Dan noodles are cooked, add them to the skillet and toss to evenly coat them in seitan and sauce


Add the chopped green onions and continue cooking for a minute or two more


Distribute the seitan and stir-fried Dan Dan noodles among serving dishes


Garnish each serving with chopped fresh cilantro leaves and crushed peanuts


Enjoy while hot!

  • 1 9-inch chocolate pie crust

  • 1 cup heavy cream

  • 1/2 cup semi-sweet chocolate chips

  • 1/4 cup sugar

  • 1/4 cup unsweetened cocoa powder

  • 2 tablespoons cornstarch

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 tablespoons powdered sugar

  • Chocolate shavings or sprinkles for garnish optional

Instructions:

In a saucepan, combine the sugar, cocoa powder, cornstarch, and salt


Gradually add the heavy cream while whisking constantly to avoid lumps

Remove from heat

Baked Egg Rolls

Enjoy these healthier baked egg rolls filled with a delicious mixture of ground pork or chicken and colorful vegetables. They make for a perfect appetizer or snack!

Ingredients:

  • 1 package egg roll wrappers

  • 1 pound ground pork or chicken

  • 2 cups shredded cabbage

  • 1 cup shredded carrots

  • 1/2 cup chopped onions

  • 2 cloves garlic, minced

  • 1/4 cup soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon ginger powder

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon salt

  • Cooking spray

Instructions:

Preheat your oven to 375F 190C


In a large skillet, cook the ground pork or chicken over medium heat until browned and cooked through


Drain any excess fat


Add the chopped onions and minced garlic to the skillet and saut for 2-3 minutes until fragrant


Stir in the shredded cabbage and carrots, and cook for another 3-4 minutes until the vegetables are slightly softened


Add soy sauce, sesame oil, ginger powder, black pepper, and salt to the skillet


Stir well to combine all the ingredients


Cook for an additional 2-3 minutes to let the flavors meld together


Place an egg roll wrapper on a clean surface with one corner facing you


Spoon about 2 tablespoons of the filling onto the center of the wrapper


Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly


Use a small amount of water to seal the edges of the wrapper


Place the rolled egg roll onto a baking sheet lined with parchment paper, seam side down


Repeat this process with the remaining wrappers and filling


Spray the tops of the egg rolls with cooking spray to help them brown in the oven


Bake in the preheated oven for 20-25 minutes, or until the egg rolls are golden brown and crispy


Serve hot with your favorite dipping sauce
