These vegan Almond Joy macaroons are a delightful treat reminiscent of the classic candy bar. They are sweet, chewy, and packed with coconut and almond flavor, topped with a decadent layer of chocolate and crunchy sliced almonds. Ingredients:
Instructions:Turn on the oven and heat it up to 325F 160C Shred the coconut and mix it with the almond flour in a large bowl Melt the coconut oil and mix it with the almond milk and almond extract in a different bowl Add the wet ingredients to the dry ones and mix them together until everything is well mixed Using a tablespoon, make small mounds of the mixture on a baking sheet lined with parchment paper When the edges are golden brown, it's done baking Take it out of the oven and let it cool down all the way As you go, melt the vegan chocolate chips in 30 second chunks in a bowl that can go in the microwave Cover the cooled macaroons with wax paper Dip the bottoms of the cookies into the melted chocolate, and then put them back on the paper While the chocolate is still warm, put sliced almonds on top of each macaroon To set the chocolate, put the macaroons in the fridge for 10 to 15 minutes Serve and enjoy the chocolate once it's set
