Super Easy Vegan Zucchini Flatbread

This Super Easy Vegan Zucchini Flatbread is not only delicious but also gluten-free! Made with simple ingredients and ready in no time, it's perfect for a quick lunch or dinner option.

Ingredients:

  • 2 cups grated zucchini

  • 1 cup chickpea flour

  • 1/4 cup nutritional yeast

  • 1 tsp baking powder

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup water

  • 1 tbsp olive oil

Instructions:

Preheat your oven to 400F 200C


In a large bowl, combine grated zucchini, chickpea flour, nutritional yeast, baking powder, garlic powder, onion powder, salt, and black pepper


Add water and olive oil to the mixture and stir until well combined and a thick batter forms


Line a baking sheet with parchment paper and spread the batter evenly to form a flatbread


Bake for 20-25 minutes, or until the edges are golden brown and the flatbread is cooked through


Remove from the oven and let it cool for a few minutes before slicing


Serve warm and enjoy!
