Roasted Vegetable Tart w Parmesan, Old Amsterdam and Cambozola

There are a lot of great flavors in this Roasted Vegetable Tart with three types of cheese: Parmesan, Old Amsterdam, and Cambozola. When you put roasted vegetables and rich cheeses on top of flaky puff pastry, you get a dish that is both tasty and rich that is perfect for any occasion.

Ingredients:

  • 1 sheet puff pastry

  • 1 egg, beaten

  • 1 zucchini, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 red onion, thinly sliced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup grated Old Amsterdam cheese

  • 1/2 cup crumbled Cambozola cheese

  • Fresh thyme leaves for garnish

Instructions:

Start by heating the oven up to 400F 200C


Put the puff pastry sheet on a baking sheet that has been lined with parchment paper


Use a fork to make holes all over the surface of the pastry


Use a beaten egg to cover the dough


Add the red onion, red bell pepper, yellow bell pepper, and sliced zucchini to a bowl


Add the olive oil, salt, and pepper


Spread the vegetables out evenly on top of the puff pastry


The grated Parmesan, Old Amsterdam, and crumbled Cambozola cheeses should be spread out over the vegetables


Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the crust is golden brown and the cheeses are melted and bubbling


Take it out of the oven and let it cool down a bit before cutting it


Before serving, sprinkle with fresh thyme leaves
