Matcha Coconut & Chocolate Orange Waffles

The earthy taste of matcha is mixed with the tropical sweetness of coconut and the zingy goodness of chocolate orange in these gluten-free and vegan waffles. They make a tasty and healthy breakfast treat that is great for people who have to follow certain diets.

Ingredients:

  • 1 cup gluten-free all-purpose flour

  • 1/4 cup matcha powder

  • 1/4 cup shredded coconut

  • 2 tbsp cocoa powder

  • 1 tbsp orange zest

  • 2 tbsp coconut sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup almond milk or any plant-based milk

  • 2 tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • 1/4 cup dairy-free chocolate chips optional

  • Coconut oil or cooking spray for greasing the waffle iron

Instructions:

Follow the directions that came with your waffle iron to heat it up


Add the matcha powder, cocoa powder, orange zest, coconut sugar, baking powder, baking soda, and salt to a large bowl


Use a whisk to mix the ingredients together


Put almond milk, melted coconut oil, and vanilla extract in a different bowl


Add the wet ingredients to the dry ones and mix them together until they are just mixed


You can add the dairy-free chocolate chips if you want to


Use cooking spray or coconut oil to grease the waffle iron


Put just enough batter into the waffle iron to cover the grid, but not too much


Follow the directions on the waffle iron's box to cook the waffles until they are golden brown and crisp


Carefully take the waffles out of the iron and do it again with the rest of the batter


Toppings like fresh fruit, maple syrup, or coconut yogurt can be added to the warm matcha coconut and chocolate orange waffles
