Mango Avocado Arugula Salad

This refreshing salad combines the sweetness of mango, creaminess of avocado, and peppery flavor of arugula, topped with crunchy almonds and a tangy dressing. It's a perfect keto-friendly dish packed with nutrients and flavor.

Ingredients:

  • 1 ripe mango, diced

  • 1 ripe avocado, diced

  • 2 cups arugula

  • 1/4 cup sliced almonds

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Instructions:

In a large bowl, combine diced mango, diced avocado, and arugula


In a small skillet, toast sliced almonds over medium heat until lightly golden, then remove from heat


Add toasted almonds to the salad bowl


In a small jar, whisk together olive oil, lemon juice, salt, and pepper to create the dressing


Drizzle the dressing over the salad and gently toss to combine


Serve immediately and enjoy!
