Instructions:In a large skillet or wok, heat the vegetable oil over medium-high heat Add the shrimp and cook for 2 to 3 minutes on each side, or until pink Take out of the skillet and place aside Add sesame oil to the same skillet and saut the ginger and garlic for about a minute, or until fragrant Stir-fry the mixed vegetables for three to four minutes, or until they are tender Place the vegetables on one side of the skillet and then cover the other side with the beaten eggs Beat eggs until they are fully cooked Stir the cooked rice and soy sauce into the skillet along with the eggs and vegetables Put the cooked shrimp back into the skillet and mix everything until it's well heated To taste, add salt and pepper for seasoning Before serving, sprinkle some chopped green onions on top
