Creamy Avocado Pasta

This creamy avocado pasta is a delicious mix of pasta and creamy avocado sauce that makes a rich and filling meal. It's quick, simple, and full of fresh flavors.

Ingredients:

• 2 ripe avocados


• 1/2 cup fresh basil leaves


• 2 cloves garlic


• 1/4 cup freshly squeezed lemon juice


• 1/4 cup olive oil


• Salt and pepper to taste


• 12 oz pasta of your choice


• 1/2 cup cherry tomatoes, halved


• Grated Parmesan cheese for serving optional

Instructions:

Follow the directions on the package to cook the pasta until it is al dente

Remove the water and set it aside

Put garlic, lemon juice, olive oil, salt, and pepper in a food processor along with the avocados

Mix until it's creamy and smooth

Add the cooked pasta to the avocado sauce and toss it around until it's well covered

Add the cherry tomatoes slowly

Serve right away, and if you want, top with grated Parmesan cheese
